2 lb ground lean (7% or less fat) beef
2 lrg eggs
1/2 cup red or green chili salsa
1/2 cup fine dried bread crumbs
1/2 cup minced onion
1 tsp salt - (about)
1/2 tsp freshly-ground black pepper - (about)
1 can whole green chilies - (4 oz)
1 cup shredded jack cheese - (4 oz)
Instructions:
Instructions: Mix beef with eggs, 1/2 cup salsa, bread crumbs, onion, 1 teaspoon salt, and 1/2 teaspoon pepper.

Pack half the meat mixture flat into a 5- by 9-inch loaf pan.

Cut green chilies into 1/2-inch strips and arrange over the meat. Sprinkle with half the cheese.

Pack remaining meat mixture over chili-cheese layer.

Bake in a 400 degree oven until well browned, 55 to 60 minutes. Sprinkle with remaining cheese and let stand about 10 minutes.

Cut meat loaf into thick slices and lift out with a wide spatula. Serve with sour cream, remaining salsa, and salt and pepper to taste.

This recipe yields 8 to 10 servings.

Comments: To satisfy the fondness her Mexican-American husband and their children have for spicy foods, Mary Guzman uses chili to jazz up simple meat loaf. She serves the meat loaf with boiled red thin-skinned potatoes. And she says she makes a large loaf because "it also makes good sandwiches."
