Instructions: * Popcorn flour is a powder-soft flour ground from popped kernels of corn. It is something you must make yourself. Pop unflavored, unsalted popcorn, then grind the cooled, popped kernels in a blender or food processor until fine. Store it the same way you store all your flours. Approximately 3 1/2 ounces of unpopped corn yield 4 cups of unpacked flour.
** Bouquet garni is a combination of dried herbs including basil, oregano, thyme, marjoram, savory, rosemary, dill, tarragon, and sage. *** Date sugar is ground from dehydrated dates and is not actually a sugar. It is high in fiber and rich in vitamins, minerals, and iron. Date sugar can be used in baking when a textured sweetener is required. (I used granulated sugar in place of it.) **** I replaced this with iodized table salt. Carefully measure dry ingredients into pan. Add the beans, liquid ingredients, and yeast. Use whole wheat mode.
