6 x	Shallots peeled
1 tbl	Coarse-ground black pepper
2 x	Serrano chiles
3 x	Thai bird chiles
6 x	Garlic cloves
2 x	Lemon grass stalks, white part only chopped
2 tbl	Minced ginger
1 tbl	Sugar
1 tbl	Kosher salt
2 x	Limes juiced
1 tbl	Worcestershire sauce

Instructions:

Instructions: In a food processor, combine all ingredients. Add just enough oil so the paste mixes well, but remains thick. Check for seasoning.
