1 x onion chopped
1 x green bell pepper chopped
2 x clove garlic minced
1 tsp soybean or olive oil
16 oz extra firm tofu, drained and crumbled
19 oz canned beans drain and rinsed (kidney, pinto or white)
28 oz canned stewed tomatoes
3 med carrots sliced
2 tbl chili powder
1 tsp ground cumin
1 tsp hot sauce
Instructions:
Instructions: Saute the onion, pepper, and garlic in the oil over medium heat. add the tofu and saute until crisp and lightly browned (about 10 minutes). Add the beans, stewed tomatoes, carrots, chili powder, cumin, hot sauce, salt and pepper. Bring to a boil. Reduce heat and simmer for 50 - 60 minutes.

Original recipe did not rinse and drain beans. Use some broth to make up for the lost liquid.

NOTES : All the vegetables offer immune boosting phytochemicals.
