1 x chicken breast fillet
1 tbl vegetable oil
2 tbl red bell pepper minced
2 tbl green onion minced
1/3 cup frozen corn
1/3 cup canned black beans rinsed and drained
1/4 cup frozen spinach thawed and drained
1/4 cup canned jalapeno peppers diced
1/2 tbl parsley fresh, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/2 tsp cayenne pepper
1 cup Monterrey Jack cheese
1 pkt tortillas (7") Avocado Dipping Sauce:
1 x fresh avocado soft, smashed
1/4 cup mayonnaise
1/4 cup sour cream
1 tbl buttermilk optional
1/4 tsp dill weed
2 tsp white wine vinegar
1/4 tsp salt
1/4 tsp dried parsley
1/4 tsp onion powder
1/4 tsp garlic powder
Pepper to taste Garnish, if desired:
Tomato chopped
Instructions:
Instructions: Grill chicken. Set aside to cool. When cooled, cut into dices. (I also use leftover chicken, turkey or canned chicken in this recipe - it all tastes great)

Preheat 1-tablespoon vegetable oil in medium-size skillet over medium-high heat. Add red pepper and onion and saute for a couple minutes until tender. Add chicken to pan. Add corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper to pan. Cook for another 4 min. Stir well so spinach separates and is incorporated into the mixture (so no one can tell its in there!). Remove pan from heat and add the cheese. Stir until cheese is melted. Set aside.

Wrap tortillas in moist cloth and microwave on high for 1-1/2 minutes or until hot. Divide the mixture into the center of the tortillas. Fold in the ends into an envelope or roll into egg roll shapes. Secure with toothpicks to hold together. Preheat 1/4 inch canola oil in electric skillet to 375 degrees.

Meanwhile, prepare avocado dipping sauce by mashing avocado and combining all ingredients in small bowl. Refrigerate until egg rolls are done.

Fry egg rolls, half at a time, until light brown on one side, flip and brown the other side. It does not take long as the mixture is still hot. Drain and serve with dipping sauce!

Note: Now, you can do these another way: you can freeze and use later for a party or dinner guests. Heat deep fryer to 375 degrees and cook egg rolls about 12-15 minutes. Remove to paper towels or a rack to drain for about 2 minutes.

Jo Says: This is our familys favorite meal. We have it at least once a week. There is a lot of gathering of ingredients initially. I usually collect the cooked chicken, beans, spinach, onions (everything except the cheese) into several batches and freeze for later use. I put them into baggies and they thaw quickly for use. IEput everything into the skillet at one time and do the initial sauteeing. Then it is truly a fast meal.

This sounds complicated because of the number of ingredients. I ready the pepper and onions in a small bowl. I put all the other ingredients in a larger bowl. Then follow the directions. It only takes a few minutes to cook. I roll the egg rolls and set aside while heating the skillet; I also mix the dipping sauce while the skillet heats.

From start to finish, it takes no more than 30 minutes!!!!!! Our favorite meal, too!!!!!
