Ingredients:
Amount Ingredient
1/2 x Cucumber, chopped roughly
100 gm Peeled prawns, thawed if frozen (3 1/2oz)
1 x 450 gram car low-fat natural yogurt, (15z)
1 tsp Lemon juice
1 tsp Chopped fresh mint
2 tsp Chopped fresh parsley
1 tsp Chopped fresh chives
Salt and pepper
Instructions:
Instructions: Place the cucumber, prawns, yogurt and lemon juice in a blender or food processor and process until roughly chopped, but not too smooth.

Stir in the herbs and season to taste. Pour into individual dishes and chill thoroughly for about 1 hour. Serve garnished with a sprig of mint each.
