900 gm potatoes unpeeled
50 gm butter
150 ml hot milk
1 x salt and pepper
1 tbl mustard seeds
2 tbl olive oil
3 x finely chopped spring onions
Instructions:
Instructions: Cover the potatoes with cold water in a large pan add a good pinch of salt bring to the boil and simmer for about 20 minutes until tender.

Drain well and leave until cool enough to handle.

Fry the mustard seeds in the olive oil.

When they start to pop shake the pan and leave until the popping stops (3 4 minutes).

Add the chopped spring onions and chopped green chillies cook for 23 minutes.

Peel potatoes and return to the pan with butter.

Mash smoothly over gentle heat then gradually add the hot milk and beat until creamy and smooth.

Fork the chilli mix into the mash with tbe juice of a lemon.

Add salt and pepper to taste.

Choose a floury potato golden wonderking edward maris piper or wilja and for the best possible mash cook whole and unpeeled.
