1 tbl Groundnut oil
1/2 x Onion, thinly sliced
2 x Green chillies, de-seeded and thinly sliced
1 x Green pepper, de-seeded and sliced
1 lrg Tomato, grilled, peeled, de-seeded and mashed
4 oz Vegetarian Cheddar cheese, grated
Instructions:
Instructions: 1. Heat the oil in a heavy-based saucepan and fry the onion, chillies and pepper for 4 minutes.

2. Add the mashed tomato and fry for a further 4 minutes.

3. Add the milk and cheese and simmer gently until the cheese is melted. Do not allow the cheese to bubble.

4. Serve immediately.
