Instructions: Heat butter in a skillet over medium heat. Add onions, heat and stir for 5 minutes. Add chicken, sour cream, grated Cheddar, and olives; mix well. Remove from heat. Divide mixture evenly between tortillas. Fold one edge over filling. Fold in sides and roll up to remaining edge. Secure with toothpicks. Heat oil to 375 degrees . Add chimichangas to hot oil and fry until well browned on all sides. Drain on paper towels.
