Ingredients:

2 tbl cooking oil
1 x chopped green pepper
1/2 cup celery, chopped
1 cup onion, chopped
1 lb ground beef
1 cup boiling water
3 x beef bouillon cubes
1 can mushrooms (10 oz size)
1/2 cup long grain rice, uncooked
10 oz water chestnuts, drained & sliced
10 oz bamboo shoots
2 cup bean sprouts (fresh is best)
3 tbl soy sauce
1 tsp salt
Instructions:
Instructions: Heat oil in frying pan. Add next 4 ingredients in order given. Saute to soften. Stir to break up meat and continue cooking until no pink color remains. Turn off heat.

Dissolve bouillon cubes in boiling water. Pour into meat mixture.

Add mushrooms, rice, water chestnuts, bamboo shoots and bean sprouts. Mix lightly to combine. Add soy sauce, salt & pepper. Stir together well. Scoop into 1 1/2 qt casserole. Cover. Bake in 350F oven for 45 minutes until rice is cooked.

Serves 4

* I drain off the excess fat from this mixture. I also use Yoshidas Gourmet Sauce instead of soy sauce to add flavour.
