Instructions: Duck is also popular in Chinese cookery with Peking Duck being one of the most famous of all Chinese dishes. Like chicken it is never roasted at home. In domestic kitchens duck is cut up and then braised or stirfried. It is also steamed and then deepfried a process which results in a very tender fatfree duck. Fresh duck is always preferable to frozen and should be stored in the same way as chicken. If you use frozen duck be sure to defrost it thoroughly first.
