Instructions: Cut the pork into 2.5 cm cubes, combine with salt and sherry.
Make batter: Beat egg white in a bowl until stiff, add cornflour mixed with soy, sherry and ginger, and mix well to make a batter. Coat pork well with batter and fry until crisp and golden. Serve with a Chinese-style sauce (eg. sweet-sour, plum and ginger) and rice. Email this Recipe:
