Ingredients:

1 kg pork fillets
1/2 tsp salt
1 tbl sherry
oil for frying
----------------- Batter ----------------
1 x egg whites
5 tbl cornflour
3 tbl soy sauce
2 tbl sherry
Instructions:
Instructions: Cut the pork into 2.5 cm cubes, combine with salt and sherry.

Make batter:
Beat egg white in a bowl until stiff, add cornflour mixed with soy, sherry and ginger, and mix well to make a batter.

Coat pork well with batter and fry until crisp and golden.

Serve with a Chinese-style sauce (eg. sweet-sour, plum and ginger) and rice.
