Instructions: * Note: Boil rice one day ahead and refrigerate until making fried rice.
Heat the oil in a heavy skillet. Add the boiled rice and stir until golden. Add green onions, salt, carrots, bell pepper and frozen peas. When mixed well and cooked, hollow out a circle in the center of the skillet. Break the egg into the hollow and scramble until cooked - then stir the egg into the rice mixture. Sprinkle with soy sauce, sesame oil and chopped parsley. This recipe yields 6 servings. Email this Recipe:
