Instructions: 1. Slice the scallops and fry in the oil for 5-6 minutes until tender then remove from pan.
2. Fry the ginger, spring onions and cucumber for 2 minutes then add the scallops. Sprinkle over the flour then add the rest of the ingredients. Stir fry until thoroughly mixed and divide between 4 scallop shells or small dishes. Serve immediately as a starter. Email this Recipe:
