Instructions: Chinese leaves (Brassica pekinensis) look rather like a large tightly packed Cos lettuce with firm pale green crinkled leaves. It is sometimes known as Chinese or Peking cabbage and is widely available in greengrocers supermarkets and Chinese grocers. This is a delicious crunchy vegetable with a distinctive but mild taste. If you cannot find it use English white cabbage instead.
