Instructions: Cut each duck into 4 equal serving pieces.

In large shallow bowl, combine marinade ingredients.

Early in the day, arrange duck pieces in marinade; cover and refrigerate for several hours, turning pieces occasionally to distribute flavor/

Two hours before serving time, remove duck from marinade (reserving marinade) and arrange on rack in shallow roasting pan. Pour hot water into roasting pan to depth of about 1 inch. Roast in 325 F. oven until duck is tender and brown, about 1 1/2 hours.

Add hot stock to marinade and baste duck frequently during roasting.

Brush with oyster sauce several times during roasting.

Keep duck warm in 200F oven until ready to serve up to 1 1-2 hours.

Garnish with orange peel.
