Instructions: Thoroughly wash the vegetables and drain well.
Cut of thick stalks as these require longer cooking. Trim stems from mushrooms squeeze water from caps. Simmer in lightly salted water for 5 minutes then drain. Plunge the vegetable stems into boiling water to cook for 12 minutes. Remove then briefly blanch the leafy parts and drain well. Toss vegetables and mushrooms in oil over moderate heat till well coated. Serve dressed with oyster sauce. Hint. Canned straw mushrooms or champignons can replace theblack mushrooms.
