Instructions: Chinese white radish is known better in this country as mooli. It is a winter radish from Asia which can withstand long cooking without disintegrating so it absorbs the flavour of a sauce yet retains its distinctive radish taste and texture. It is long and white and rather like a carrot in shape but usually very much larger. It must be peeled before it is used. Chinese white radish can be bought in many supermarkets and greengrocers (under the name mooli) and in Asian and Chinese grocers. Look for ones which are firm heavy and unblemished. They should be slightly translucent inside and not tough and fibrous. Store in a plastic bag in the vegetable compartment of your refrigerator where they will keep for over a week. If you cannot find white radish use turnips instead.
