Instructions: HEAT oven to 350F.
HEAT chocolate, unwrapped, in microwavable bowl on HIGH 1 to 2 minutes or until almost melted, stirring halfway through heating time. Remove from oven. Stir until chocolate is completely melted; set aside. MIX flour, baking soda and salt in large bowl. Beat eggs in medium bowl; stir in melted chocolate, sugar, buttermilk, 1/2 cup oil and banana. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in 2 cups of the cereal. Spoon batter into greased 9x5-inch loaf pan. CRUSH remaining 1/2 cup cereal in small bowl. Drizzle with 1 teaspoon oil; stir until crumbly. Sprinkle evenly over batter. BAKE 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Melting Chocolate Technique: 1. Place chocolate squares in small heavy saucepan on low heat. Stir constantly until chocolate is completely melted. Remove from heat immediately. Add to recipe as directed. 2. OR, place chocolate squares in top portion of double boiler or in bowl over a larger pan of simmering, not boiling, water. Stir occasionally until chocolate is completely melted. Note: Be careful not to get any water in the melted chocolate or it will "seize" and become grainy. Prep Time: 15 mins.
