Instructions: Separate eggs.
Chop chocolate and butter. Heat milk with chocolate with butter, stirring over low heat until melted. Remove from heat, stir in egg yolks, sugar and 1/2 the breadcrumbs and mix well. Stir in remaining breadcrumbs, cinnamon and vanilla to taste. Whisk egg whites to a stiff froth, fold them into the mixture at the last minute, then pour mixture into a well buttered 1.25 litre pudding mould. Secure with a tight fitting lid or foil. Steam for 1 to 1 1/2 hours until the pudding is well risen and feels firm to touch. Serve with chocolate sauce or custard. Email this Recipe:
