1/2 cup olive oil extra light
1/2 cup maple syrup
1 tsp vanilla extract
1 x egg
1/8 tsp salt
1 tsp grated orange peel
1/2 cup whole wheat pastry flour
1/2 cup unbleached flour
2 cup rolled oats
1/2 tsp baking soda
1/2 cup chopped walnuts or pecans
1/2 cup semisweet chocolate chips
Instructions:
Instructions: Preheat oven to 375. In a medium bowl, beat together olive oil, syrup, vanilla and egg. In a large bowl, mix salt, orange peel, both flours, oats and baking soda. Gradually mix the contents of the first bowl in with the second one. Add the nuts and chocolate chips to the mixture. Refrigerate 15 minutes. Scoop rounded teaspoons of dough onto baking sheets coated with vegetable oil spray. Bake 10 - 12 minutes.

NOTES : I have suggested substituting half the oil with applesauce.
