Instructions: Preheat the oven to 325F.
In a large bowl mix the buttermilk & sugar. Mix in the remaining ingredients, except the fudge, one at a time, stirring well after each addition. Drop by teaspoonfuls onto a non stick cookie sheet thats been lightly coated with vegetable oil cooking spray. Place a cube of fudge on each cookie. Bake for 13 minutes. Makes 4 dozen cookies; 1 cookie contains just under 1/2 gram fat. Note: Hersheys Reduced Fat Chips can be used with wonderful results; however, this raises the fat content to 1 gram per cookie.
