Instructions: Heat chocolate on range or in microwave until completely melted.
Meanwhile (in large bowl) beat egg whites until foamy, but not stiff. Gradually add sugar to foamy egg whites. Then add vanilla extract (Note: rum or brandy flavoring may be used instead of vanilla if you prefer.) Fold in the hot melted chocolate and the coconut. Dont add all 3 cups at the same time. When ingredients look evenly mixed, drop on lined cookie sheet and bake for approximately 15 minutes at 350 degrees Fahrenheit. DO NOT OVERBAKE. After cooling, store tightly if not eating immediately, as these cookies will harden.
