Instructions: Preheat oven to 325 degrees.
In a saucepan, over medium heat, bring sugar, butter and water to a boil; remove from heat. Stir in one cup of chocolate chips and vanilla; stir until smooth. Cool for 5 minutes. Beat in eggs, one at a time until well mixed. Combine in another bowl, flour, salt and baking soda; stir into chocolate mixture. Stir in another cup of chocolate chips. Pour into a 9-inch-square baking pan. Bake at 325 degrees for 35 minutes. Let cool completely. Place in freezer for 30-40 minutes (do not freeze completely). Cut into bars. In a microwave or double boiler, melt 2 cups of cherry chips with 2 tablespoons of shortening; stir until smooth. With a small fork, dip brownies in melted chips to completely coat. Shake off excess. Place on waxed paper lined baking sheets. Once all brownies are dipped and cooled, melt remaining 2 cups chocolate chips with 2 tablespoons shortening; stir until smooth. Dip the brownies again to coat completely. Leave on waxed paper to cool and harden. Store in airtight container in a cool place. Makes approximately 3 dozen. Email this Recipe:
