Yield: 3 1/2 dozen cookies Preheat oven to 375 degrees F. Use ungreased baking sheet. In double boiler, melt chocolate over 1-inch simmering water. Cream butter with sugar and brown sugar; mix in egg and sour cream. Stir flour with baking powder, salt, and baking soda. Gradually add dry ingredients to creamed mixture. Divide dough in half. Add melted chocolate and the vanilla to half; add peppermint extract and food coloring to other half. Chill dough about 1 hour or until firm. Between 2 pieces of waxed paper, roll each half into a rectangle 1/8 inch thick. Place peppermint half on top of chocolate half and roll as for jelly roll. Wrap in waxed paper; chill. Cut in 1/4 inch slices. Place on baking sheet. Bake 8-10 minutes. Email this Recipe:
