6 oz Finest bittersweet or semisweet chocolate
3 tbl Unsalted butter, softened
2 tbl Orange- or coffee-flavored
Liqueur
6 lrg Eggs, separated into yolks and whites
1/2 cup Heavy cream
Instructions:
Instructions: Melt the chocolate in top of a double broiler or in a microwave set to medium power, stirring occasionally until smooth. Stir in the butter until melted. Stir in the liqueur and set the mixture aside.

Beat the egg yolks with an electric mixer until light in color, about 3 minutes.

Fold in the cooled chocolate mixture. Whip the cream with an electric mixer until fluffy and soft. Fold the whipped cream into the chocolate mixture.

Beat the egg whites with an electric mixer until foamy. Gradually sprinkle in the sugar and continue beating until the egg whites are stiff. Fold the egg whites into the chocolate mixture. Divide the mousse among four tall goblets and chill until ready to serve.
