3/4 cup Pecans coarsely chopped
1 cup Flour All-Purpose
3/4 cup Whole-Wheat Flour
1/2 cup Sugar
1/3 cup Pernigotti Cocoa
2 tsp Expresso Powder
2 tsp Baking Powder
1/2 tsp Salt
2 x Eggs
1 cup Milk
1 tsp Vanilla
Instructions:
Instructions: Toast pecans in 350 deg F oven until color darkens slightly. Remove and let cool. In bowl, blend together dry ingredients except nuts. In separate bowl whisk eggs, vanilla, buter and milk until blended. Add liquid ingredients to the dry and stir until blended. Stir in pecans.

Divide batter among buttered muffin cups. Bake in 400 deg F oven until tops are lightly browned and toothpick comes out clean (15 - 20 min).

Remove and cool on wire rack.

Makes 12 regular muffins or 6 crown muffins.
