2 stk unsalted butter softened to
room temperature
10 pkt sugar substitute
1 x egg
1 tsp vanilla extract
1/2 cup pecans finely chopped
1 cup Atkins Bake Mix
Instructions:
Instructions: Heat oven to 325 degrees. With an electric mixer, beat butter and sugar substitute until fluffy. Beat in egg and extract. Beat in bake mix and cocoa powder. Mix in pecans with a spoon.

Drop dough by heaping teaspoonfuls onto baking sheets. Bake 14 minutes, until set. Cool on sheets 1 minute before transferring to wire racks to cool completely.

This recipe yields 36 cookies.
