1 cup sugar
1/2 cup butter or margarine softened
2 oz unsweetened chocolate (2 squares)
melted and cooled
1 x egg
1 tsp vanilla
2 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt

Instructions: Cookie Monsters, young and old, will love this combination - chocolate and peanut butter!

1. In large mixing bowl, combine sugar, butter, chocolate, egg and vanilla. Cream together, using Speed 2 of the Spatula Smart Power Boost Mixer, for about 1 minute. Add dry ingredients; mix together well using Speed 1 for about 45 seconds, occasionally scraping sides of bowl.

2. Divide dough into 2 equal parts; form into logs 2" around and 5" long. Wrap in plastic wrap or wax paper and chill in the refrigerator at least 2-3 hours, or until firm.

3. Preheat oven to 375F.

4. Cut one log in half and each half into quarters. Cut each piece into 3 equal slices, to make 24 slices in total.

Place 12 slices on an ungreased baking sheet. Place 1 teaspoon peanut butter in the center of each slice. Top peanut butter mounds with remaining 12 slices. Using a fork, seal the edges of each cookie. Bake for 11-13 minutes; remove immediately to cooling rack. Repeat procedure with remaining log.
