Instructions: For the cookies thoroughly combine the butter sugar milk egg and vanilla extract in a bowl then stir in the flour bicarbonate of soda oats and a pinch of salt.
Once combined stir in the chocolate raisins. Drop 24 tp 30 spoonfuls of the niixture onto 3 greased baking sheets and bake at 180C/350F/Gas Mark 4 for about 15 minutes until golden brown at the edges. Remove with a spatula and cool on a wire rack. To serve soften the ice cream slightly then spoon some onto the flat side of one cookie. Top with another cookie. Either serve at once or return to the freezer to firm up for 30 to 40 minutes. Serves 4 Email this Recipe:
