Ingredients:

4 x cannoli shells or 4 miniature graham cracker crusts
----------------- For the Chocolate Filling: ----------------
1 tbl sugar
1/2 tsp cinnamon
1 cup ricotta cheese
1 cup chopped milk chocolate
1/4 cup pistachios, chopped
----------------- For the Coffee Filling: ----------------
1 tsp instant coffee
1 cup ricotta cheese
1 tbl sugar
Instructions:
Instructions: For chocolate filling, in a medium bowl, combine sugar and cinnamon. Stir in ricotta, chocolate and pistachios. Cover and chill for 30 minutes.

For coffee filling, in a medium bowl, dissolve coffee in 1 teaspoon boiling water. Stir in sugar, ricotta and hazelnuts; mix well. Cover and chill for 30 minutes.

To fill cannoli shells, spoon or pipe a filling into each shell or crust.

(Shells are available at Italian markets or in the specialty food section of most grocery stores.) Serve immediately.
