Instructions: For chocolate filling, in a medium bowl, combine sugar and cinnamon. Stir in ricotta, chocolate and pistachios. Cover and chill for 30 minutes.
For coffee filling, in a medium bowl, dissolve coffee in 1 teaspoon boiling water. Stir in sugar, ricotta and hazelnuts; mix well. Cover and chill for 30 minutes. To fill cannoli shells, spoon or pipe a filling into each shell or crust. (Shells are available at Italian markets or in the specialty food section of most grocery stores.) Serve immediately.
