Ingredients:

1 sm Bunch broccoli
1 x Sweet red or yellow pepper, seeded and diced
1 x Carrot, peeled and grated
1/2 x English cucumber, seeded and diced
2 stalk celery, coarsely chopped
1 cl Garlic, minced
2 tbl Chopped fresh parsley
2 tbl Chopped fresh chives or green onion
1 tbl Chopped fresh dill
2 tbl Lemon juice
2 tbl Red wine vinegar
1/3 cup Olive oil
1/4 tsp Salt
Instructions:
Instructions: 1. Break broccoli florets into small pieces. Peel stems and cut into small pieces.

2. In a large bowl, combine broccoli, sweet pepper, carrot, cucumber and celery.

3. In a small bowl, combine garlic, parsley, chives, dill, lemon juice, vinegar, olive oil, salt and pepper. Whisk to combine well.

4. Pour dressing over salad ingredients. Toss well and serve.

Yield: 6 servings. Prep.

Time: 20 minutes.
