Ingredients:

1/2 tsp coriander seeds (to 1 tsp), crushed
1/2 tsp cumin seeds (to 1 tsp), crushed
1 x dried ancho chile, (to 2)
1 x 12 oz pkg prebrowned vegetable protein crumbles
2 x eggs
2 tbl cider vinegar
2 x cloves garlic
2 tbl paprika
1 tsp dried oregano leaves, (to 1 1/2 tsp)
1/2 tsp salt
vegetable cooking spray
1 cup Red Tomato Salsa, (pg 9)
Instructions:
Instructions: 1. Heat seeds in small skillet over medium heat until toasted, stirring frequently Remove from skillet. Add chili to skillet; cook over medium heat until softened, turning frequently so chili doesnt burn, 1 to 2 minutes.

Remove and discard stem, veins, and seeds. Chop chili finely.

2. Combine vegetable protein crumbles, seeds, chili, eggs, vinegar, garlic, paprika, oregano, and salt. Form mixture into 6 patties.

3. Spray large skillet with cooking spray; heat over medium heat until hot.

Cook patties over medium to medium-low heat until browned, 3 to 4 minutes on each side. Serve patties with Red Tomato Salsa and sour cream.
