Ingredients:
Amount Ingredient
225 gm Pork, minced coarsely (8oz)
75 gm Pork fat, minced (3oz)
3 tbl Malt vinegar
1/2 tsp Salt
1/2 tsp Ground black pepper
2 x Cloves garlic, crushed
2 tsp Cayenne pepper
1 tbl Paprika
1 tsp Coriander seeds, crushed
1/2 tsp Powdered cinnamon
1/2 tsp Oregano
1/2 tsp Marjoram
A pinch of grated nutmeg
Instructions:
Instructions: Mix all the ingredients together thoroughly.

Place in a refrigerator in a non-metallic bowl and marinate overnight.

Keep it uncovered in the fridge and stir daily.

To cook, stir the desired amount into a little hot oil and fry for 5-7 minutes until crisp and crumbled. Use as a garnish for antojitos

(light meals) or as a flavouring for other foods.
