Instructions: Place all ingredients except sausages in a large kettle or a crockpot. Simmer on low heat approximately 4 hours in kettle, 6-8 hours in crock pot. One half hour before serving, add sausages to pot and allow to heat throughly. Serve with boiled, mashed, or pan broiled potatoes, or potato pancakes. Put out lots of mustard and ketchup for the sausages. Carrots and parsley add color. Variation: Add 2 Tablespoons black caraway seed to the sauerkraut.
