Instructions: Cream butter and cream cheese together. Add sugar. Beat well. Beat in vanilla and lemon rind. Add eggs, one at a time, beat well after each egg. Mix flour and baking powder together. Put 1/4 c. flour over fruit in bowl and mix it. Mix into batter.
Makes 2 loaves or 1 Bundt cake. Bake at 300 F for 70 to 80 minutes or until toothpick put in centre comes out clean. Cool in pan for 10 minutes. Then turn out on wire rack. Let cool completely. Option: Dust with icing sugar or drizzle with glaze. Email this Recipe:
