Prepare Beans: Rinse and pick over beans. Pour boiling water over beans to cover by 2 inches, cover and leave for 1 hour, then drain and rinse. Prepare Casserole: In a 2 quart casserole place all ingredients except garnish, mix well, adjust seasoning (pepper and salt, if desired), cover and bake in a 300 degree oven until beans are the desired degree of tenderness (about 4 hrs). Uncover, garnish with parsley (or green onions). Serve piping hot. With 2 ounces of bacon, PER SERVING: 530 cals, 21.4 g tips - Gourmet Food Store warns that these beans produce a lot of foam.
