50 gm butter
100 gm brown sugar
175 gm currants
175 gm raisins
50 gm almonds, slivered
50 gm mixed peel
100 gm glace cherries, red
1 x lemons
1 x oranges
3 x eggs
100 gm breadcrumbs, fresh
100 gm suet
3 tbl brandy
3 tbl whiskey
1 x apples, Granny Smith
1/2 tsp mixed spice
Instructions:
Instructions: Grate peel from lemon and orange.

Peel and gate apple.

Mix the currants, raisins, almonds, peel, lemon and oange rind, cherries, apple and sugar. Add the suet, butter, breadcrumbs, eggs, orange juice, spices, treacle, brandy and whiskey. Mix well to combine.

Oil pudding basin, put mixture in and press down well. Cover top with greaseproof paper and seal basin with lid or foil tightly. Steam for 3-4 hours, taking care not to let water evaporate dry. Add more water as necessary.

Seal well and leave to mature in a cool, dry place for 1 month.

To reheat, steam for 2 hours and serve with brandy sauce and cream.
