Ingredients:
Amount Ingredient
1 lb lean pork boneless loin cut into 3/4-inch pieces
1/2 lb fully cooked smoked beef sausage cut into 1/2-inch slices
1 lrg onion chopped (1 cup)
2 med stalks celery sliced (1 cup)
2 x cloves garlic finely chopped
1 x 15 ounce can black beans rinsed and drained
1 x 15 ounce can chunky tomato sauce
1 x 10 ounce can diced tomatoes and green chilies
1 cup water
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
Instructions:
Instructions: Mix all ingredients in 3 1/2- to 6-quart slow cooker.

Cover and cook on low heat setting 8 to 10 hours (or high heat setting 3 to 5 hours) or until pork is tender.

6 servings.

Substitution: For a "red and white" chili, leave out the sausage and use 2 pounds of pork Add a can of great northern or pinto beans instead of the black beans.

Special Touch: Let everyone add his or her own special touch by passing bowls of shredded Cheddar cheese, chopped avocado, sliced jalapeno chilies, chopped onion, sliced ripe olives, chopped fresh cilantro and sour cream.
