1 tbl olive oil
1 lrg onion
2 can diced tomatoes - (14 1/2 oz ea) undrained
2/3 cup hot salsa
1/2 tsp chili powder
1/2 tsp ground cumin
2 can red kidney beans - (15 to 16 oz ea) rinsed, drained
1 lrg red bell pepper chopped
1 lrg zucchini cut 1/2" chunks
Instructions:
Instructions: In a large saucepan, heat the oil over medium heat. Add the onion and saute for 2 to 3 minutes.

Add the tomatoes, salsa, chili powder, and cumin. Reduce the heat to low, cover, and simmer for 10 minutes.

Add the remaining ingredients, cover, and simmer for 20 to 25 minutes, or until the vegetables are tender. Ladle into bowls and serve.

This recipe yields 8 servings.

Serving size: 1 cup.
