Instructions: Heat the oven to 175C/350F. Cut an "X" in the tomatoes and let them boil in water for about 1/2 minute. Rinse in cold water and pull off the skin.
Peel onions and garlic. Chop tomatoes, onions and garlic and put it in a large, oven-proof dish. Stir in vinegar, brown sugar, salt, ginger, sage and black pepper. Cut the chicken in 8 pieces and put them on top of the tomato mixture. Brush the chicken with oil and flavor with salt, pepper and sage. Put in the oven for about 40 minutes and decorate with sage or parsley. Serve with boiled potatoes and boiled broccoli. Enjoy! 4 Servings Email this Recipe:
