Instructions: Combine all of the ingredients except the pepper in a non-reactive med. saucepan and bring to a boil over high heat. Lower the heat to moderate and simmer until the apples are tender, about 20 min. Strain the mixture into another non-reactive sa ucepan, add the pepper and cook over high heat until reduced to 1/2 cup, about 15 to 20 min.
