2 cup of fresh bread crumbs (Ive used much less)
3/4 cup minced onion
1/4 cup minced green pepper (optional)
2 x eggs
2 lb ground chuck or better grade
2 tbl horseradish (dont omit this)
1/2 tsp salt
1 tsp dry mustard (I use regular mustard)
1/4 cup milk
1/4 cup ketchup

Instructions: Prepare the bread crumbs, onion and green pepper. Preheat oven to 400. With a fork slightly beat the eggs; mix in the ground chuck. I find this goes much quicker if I use my squeaky clean hands or you could use plastic gloves, and for this reason I set the burger, eggs and other refrigerated (and measured) ingredients out for about 30 minutes before I begin preparations. Add the bread crumbs, onion and optional green pepper. Add horseradish, salt, mustard, milk and 1/4 cup ketchup; combine lightly but thoroughly. Again, I use my hands.

In a bowl, shape meat loaf into an oval; turn onto a shallow baking dish or a bake and serve platter, smooth into a shapely loaf. Here, I have baked this meat loaf in a loaf pan, on a platter and once in a pie tin. Use whatever you like. Spread the top with the 1/2 cup ketchup. Dont skimp on this part. Bake for 50 minutes. Recipe will feed up to 8. I serve with baked potatoes, green salad and hot rolls.
