Instructions: Heat the oven to 400 degrees. In a small bowl, combine the mustard and honey and spread the mixture on one side of the salmon steaks. Place the steaks, mustard side up, in a baking pan.
Sprinkle the salmon with 3 Tb of the tarragon. Top each steak with a slice of tomato and sprinkle with the remaining tarragon. Scatter 1 tsp of the capers over each steak. In a small bowl or measuring cup, combine the wine and water. Pour it into the pan around (but not over) the fish. Place the baking pan with the fish in the hot oven and bake for about 15 minutes or until it is just cooked through. Email this Recipe:
