1 cup Flour
1 cup Whole almonds toasted
3/4 tsp Ground cinnamon
1/8 tsp Salt
7 tbl Chilled unsalted butter -
Cut into pieces
1/3 cup Firmly packed brown sugar
1 x Egg yolk
1/2 tsp Vanilla extract
Instructions:
Instructions: Preheat oven to 350 degrees.

Combine flour, 3/4 cup almonds, cinnamon and salt in processor. Process until almonds are coarsely ground. Add butter, brown sugar, yolk and vanilla; blend just until dough forms clumps.

Form dough into 1-inch balls. Press 1 whole almond into center of each ball. Form balls into desired shapes, such as hearts, rounds, diamonds or ovals, wrapping dough around almond to encase completely. Place on ungreased cookie sheet.

Bake until cookies are brown on bottom, about 20 minutes. Cool on sheet 5 minutes. Carefully loosen cookies from cookie sheet. Place powdered sugar in bowl. Gently roll cookie in sugar to coat. Cool on rack. Store cookies in airtight container.
