Instructions: Cook apples in 1 tablespoon butter until barely tender. Set aside. Sift together flour, sugar, baking powder and salt.
Combine eggs, milk, melted butter and undrained apples. Add to dry ingredients and stir until just moistened. Add tablespoon cinnamon-sugar mixture. Spray griddle or pan. Use 2 tablespoons batter per flapjack. Cook as you would pancakes. Top hot flapjacks with soft butter and additional cinnamon-sugar. Makes 18-20 flapjacks.
