2 cup flour
1/4 cup sugar
1/2 tsp baking soda
1/2 tsp cinnamon
1 cup unsweetened applesauce
1/4 cup plus 2 tablespoons fat-free egg sub.
1/2 cup (packed) grated carrots (about 5 med.)
2 tsp vanilla extract
1/2 cup chopped walnuts
Fluffy Cream Cheese Frosting
8 oz non-fat cream cheese
1 tbl skim milk
1 tsp vanilla extract
sugar sub. equal to 1/3 cup sugar
Instructions:
Instructions: Place four, sugar, soda and cinnamon in a large bowl and stir to mix well.

Add applesauce, egg sub., carrots and vanilla and stir to mix well. Stir in walnuts. Coat 9 x13 pan with nonstick cooking spray. Spread batter evenly in the pan. Bake at 325 for 35 minutes or until done. Cool to room temp.

To make frosting, beat cream cheese, milk, vanilla and sugar sub. with an electric mixer until smooth. Fold in whipped topping. Spread frosting over cooled cake. Cut into 2 x 3 inch squares and serve immediately or refrigerate.
