Instructions: To make crust: Mix together the crumbs and butter. Spray a 9-inch nonstick pie pan with cooking spray for no-fat cooking, then press the crumb mixture into the sides and bottom, coating evenly.
Bake in a preheated 350 oven 6 to 8 minutes, watching carefully so that crust doesnt burn. Remove from oven; cool thoroughly before filling. To prepare filling: Put 1/4 cup cold milk in the blender jar. Sprinkle on gelatin to soften. Add boiling water, then cover and blend, scraping sides often, until all gelatin granules are dissolved. Add sugar substitute and blend until dissolved. Add remaining milk and cottage cheese. Cover and blend smooth. Add chocolate pudding mix, vanilla, salt, and cinnamon. Cover and blend smooth. Pour into cooled pie shell and chill several hours until firm and set. Serve from pie pan. (130 calories per serving; in custard cups without crust, 6 servings, 120 calories each) For a nice garnish, just before serving, top each cup with a tablespoon of whipped cream (25 calories); whipped evaporated skim milk, prepared according to label directions (5 calories); pressurized whipped cream (10 calories); or sugar-free low-cal whipped topping mix made according to package directions (5 calories).
