Instructions: Puree in blender or processor mustard greens, egg, and garlic. Drizzle slowly as you add red wine vinegar and vegetable oil to pureed mixture. Mix thoroughly, then add Dijon mustard. Stir well until all ingredients are blended. Store in half pint jars in refrigerator.
