Ingredients:

3 tbl Finely chopped jalapeno
2 tbl Finely chopped ginger
1 tbl Chopped garlic
3 tbl Lime zest
3 tbl Lime juice
1 tbl Coarse salt
1 tbl Crushed black peppercorns
2 tbl Sugar
1 cup Dry white wine
4 x Tuna steaks, 1-1/2 inches thick (6 oz.)
Instructions:
Instructions: 1. To prepare the crust: In a small saucepot combine the jalapeno, ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and white wine. Simmer the mixture for 5 minutes on medium heat. Most of the liquid will be absorbed. Remove from the heat and cool.

2. To prepare the tuna: Pack the crust mixture onto the tuna steaks.

Let them absorb some of the flavors for 20 minutes at room temperature before cooking. Preheat a heavy pan very hot for 5 minutes. Drizzle the tuna with olive oil, then sear for only about 30 seconds on each side. Serve.
